INGREDIENTS
1 Tsp @buddingfoods rice flour
2 Tbsp @buddingfoods coconut flour
1 Tbsp sugar
1/4 Tsp baking soda
2 Tsp cocoa powder
3 Tbsp Almond milk (or any dairy-free milk)
1 Tbsp @buddingfoods coconut oil
FOR THE GLAZE
Mix a teaspoon of cocoa powder with a tablespoon of maple syrup.
INSTRUCTIONS
In a large microwave-safe mug, combine dry ingredients: flour, sugar, cocoa powder and baking soda.
Stir in almond milk and coconut oil then microwave for 1 minute. Note that the cake will quickly rise and then deflate. Allow to completely cool before serving.
